At Callaloo, our passion is to create delicious food through chef-driven creativity and authentic Trinidadian flavor. As a colonial-Caribbean island nation, Trinidad & Tobago’s cuisine is a rich fusion of many traditions and cultures. Pair the south-Asian and African-creole influences with the availability of unique tropical ingredients, and you get an unforgettable and inspiring range of flavors and combinations.
The word Callaloo describes a Trinidadian dish that is a combination of many ingredients. In essence, this word tells the story of our family. Amos is a chef from Lancaster, while Amanda is from Trinidad. Coming from different cultural backgrounds, it has long been our dream to bring the flavors of Trinidad to Lancaster. We moved our family to Trinidad for several years, to intentionally study the nuances of the cuisine and culture. During this time, Amos was able to work alongside Amanda’s father in the restaurants that he has operated for over 35 years. We are so excited to bring the flavors and culture of Trinidad to Lancaster, and we can’t wait to serve you.
